I am going to by a Chili Forge with dual burners. Chili makes the Habanero which is round and the Cayenne that has a slight oval shape and a slightly wider opening than the Habanero.

Question, which one is best for forging knives ? Type of knives being made are small skinners to large bowies.

The Habanero will do the job just fine. I would add a probe port to it. That way if you find you would like to add a thermal couple you can.

Todd you also might want to check out the NC Tool company forges. They do reach welding heat and work well. I would suggest the knifemaker model or the whisper lowboy. I have the lowboy and it works fine, plus the extra side door comes in handy.

I find it building them to be the best option I really don't like any of the models on the market by building my own I can make it the way it works best for me. I found the book Burners For Forges and Kilns by Micheal Porter ISBN-10: 1879535203 |very helpful when I built the first few (I still refer back to it now and then.)
