Beaumont Metal Works has flat and 1 degree aluminum disks. Not sure where you could get a steel one.

Hey Scott, I second what Jason said. Beaumont has the aluminum 9" disc both beveled and flat. I know Beaumont and they make quality products. I do know that TruGrit has the same type of 9" discs and they are made by Hardcore and a bit cheaper. I do not know anything about Hardcore so you would have to decide on that but I do know that TruGrit is a reputable site. Just some info for you to use. Good luck.

Scott, Google Wayne Coe, Blacksmith. He sells an interchangeable steel disc system. I bought the aluminum one from Beaumont and did not like it. I love the steel disc.

Good Luck!

Personally, I would not recommend purchasing that system from Wayne Coe. The system is excellent and can be purchased directly from the maker here: http://nielsendesigndiscgrinder.com/Welcome.html

I purchased a set from Wayne Coe and when it arrived, the discs were rusted and pitted. I contacted him about the poor condition and his response was "who cares? you are going to cover them with sandpaper." I contacted Rod Nielson and he took the set back and sent me a new set of discs. I ended up paying more in shipping (Rod's shop is in Canada) but it was worth it. This magnetic hub is a timesaver like you wouldn't believe. The interchangeable discs come in flat, 1 degree bevel, and a modified flat with a tapered back edge for getting into those tight spots on folders and other small parts. Well worth every penny you will spend.
