My latest completed knife a Santoku they are usually under 7 1/2 inches the customer wanted this one between 9 and 10 it ended up at 9 3/4 made of 1095 15n20 .101 at the bolster with a slight taper and a coffee finish(food safe). The handle is Spalted Maple with a domed nickel silver pin,bolster is also nickel silver and has a black micarta accent. It was a fun project with some challenges.
