I have some 440c steel that was given to me but since I do not, as of this point, make Stainless knives am wondering if it is a good option to use it as guard material? Any info on this will be helpful. Thanks.

I use scap 440c all the time for guards. I feel if it is good enough for a blade it is good enough for a guard.

440C would be great.
I recommend the scrap steel be heat treated even though it is not being used as the blade steel
Heat treat it before or after you shape it
