As I move towards presenting for my JS test next year I am working to come up with process for all of the sticking points that I identify in knife making.
Plunges are a PITA for everyone.
Today I tried this process.
Pics are as followed.
Knife is ground to about 500.
I have several EDM stones to polish the plunge and then use 3.5 micron diamond paste and a small buffing wheel on my rotary tool to polish it out.
This is the result.

That looks pretty good! I'm ironing out my own processes for my JS knives, too. I wouldn't trust myself to set the plunges with a rotary tool! Is it a trick of the light or is the edge kind of rounded on the right side (when looking at the edge)? I tend to struggle with rounding over that leading corner.
