I usually just do San Mai out of mild steel, but I want to try some with stainless. Can anyone offer any advice on 316 vs 410 vs 304 etc for stainless? Does it matter?

I posted a thread about 316 or 416 last year. There was some very good input from the community about the pros and cons of various stainless steels. I'd recommend checking that out.
